These are so pretty even the kids will eat them!
I prepped these the day before, peeled, washed, and cut on the bias.
I just baked them on 350 for about 30 minutes with salt, pepper, and a bit of chicken stock, covered with foil.
If you want them crispy, you will need to boil first then toss with some EVOO and cook uncovered.
I diced the leftovers and used them on a salad. The colors make it easy to eat healthy!
