Potato crusted white fish from Italia

Another dish from my cooking lessons in Italy. This was a sea bass that was fresh from the region.

Carefully fillet the fish, or if you’re like me, you will buy it already done.

Using a mandolin, slice some potatoes, I may modify this later and try it with onion, lemon, or parsnips.

Season with salt and pepper and top with potatoes.

Add some rosemary and bake at 350 for about 20 minutes. Just before serving, you can make a quick sauce if you want. Make a rue with 1 tsp of butter and 1tsp of flour per serving and add fresh lemon juice and a little vegetable stock to thin it out if needed. Serve with potatoes or just veggies.
