Garlic scapes are the stalks that grow from the bulbs of garlic plants. If unharvested, the scapes eventually bloom flowers when the garlic plant fully matured.
They look like green onions but are longer and twisty looking.
I was told you can eat them raw on a salad, top off a hot dish, blitz into a pesto, or in a stir fry.
I tried them with an omelette and it was good.
First, I just diced them fine and sautéed with some EVOO.
Then a few eggs and some spices with a little grate of parm on top.
It was an interesting taste, though I prefer asparagus for this dish.
Next I think I will try the stir fry!
