Lazy Sunday morning breakfast in! Baked eggs with asparagus and onions.


 Start by preheating the oven to 300, I used a sheet pan and two oven safe dishes. Meanwhile, chop some veg that you have in the fridge. Here I used red onion and asparagus.

I used the deli salami to line the bowls, then put in the chopped veg. I put some water into the bottom of the lined pan. Into the oven for about 15 minutes, or you can sauté the veg and put it all in together.

Remove from the oven and add a little cheese and crack an egg or two, season with black pepper, cayenne, and parsley. Then back into the oven for another 15 minutes. This can be done at a higher temp, but I was preparing the table and sides at the same time, so I wanted it to cook slower.

While that is happening, I’m cutting up fruit, a staple for any brunch. Here I have mango, and dragon fruit. Then set the table and put English muffins or toast in the toaster to start when the eggs are almost done.

After 16 minutes, the whites were fully cooked and the yolks were a tiny bit soft, perfect for me. Serve it up.

You can eat out of this dish or make a sammy if you’d prefer.
