I find it hard to cut spaghetti squash, so I just wash it well with soap and water, then shove it in the oven at 350 for about 30 minutes. Then remove it, cut in half, season with salt, pepper, cayenne. Return to oven for another 30.
Thinly slice chicken breast and season with your favorite spices. I used garlic powder, black pepper, and cayenne.
You can use some bread crumbs also. Sauté with some EVOO on medium high heat.
Since the oven was still on, I just browned it and placed on a baking sheet. When they were all done I baked for 10 minutes.
While that was in, I rinsed out the pan bc there were burnt pieces, then used up some wine about 1.5 cups.
Let it cook down and add some herbs. Then return the chicken to the pan and serve.
Remove the spaghetti squash with a fork and place chicken on top.
Yum!
Give it a try!
