Sautéed white fish over butternut squash


I found frozen butternut squash that is finely diced and it’s great! When you’re in a hurry, it’s a quick option to have on hand. I put this over medium heat with a little water.

Once it defrosted, browned it a bit with some EVOO, added some fresh parsley, salt, and ancho chili powder.

Then I used the same pan to sauté the fish with a little EVOO. Add salt, pepper, and fresh lemon juice or lemon pepper seasoning if you’d prefer.

I usually have grilled veggies in the fridge, and I added some mushrooms and onions to round it out.
