Weeknight meals can be hard to get on the table some days. I use the oven to help me manage my time and take some help from the store with premade shortcuts.
First thing, preheat oven to 350.
Take whatever veggies you have and cut to a size that will let them cook quickly. I have some baby potatoes, zucchini, mushrooms, and corn on the cob that I put in with the husk on after soaking in water for a few minutes. These get tossed with EVOO and salt then into the oven. Set timer for 20 minutes and get other stuff done.
Take some chicken breast, cut slits into it without going all the way through. I seasoned with salt and ancho chili powder.
Fill these with salsa.
Cover with shredded cheese, this is a cheddar mozzarella blend. After the 20 minutes for the veg is done, put these in and set timer for 15 minutes.
Check to be sure his is fully cooked and serve!
Give it a try!
If you have leftovers, use this the next day with a tortilla or wrap and add black beans!
