Breakfast burrito: eggs, black beans, tomatoes and cheese… oh my!

Leftovers have never looked so good! Keep those black beans from Latin food night at home or from your favorite restaurant.

I use two pans. On medium heat, start melting some cheese on a wrap. Using medium high heat, start the eggs.

Once the cheese has melted a little, I put the black beans on top and covered so they would heat through.

I also heated up some awesome heirloom tomatoes but you can use them raw as well.

Then combine.

I just folded it together since this isn’t a true burrito wrapper.

Flip over and press gently and it should stay together. I added some sour cream and sausages on the side.
