It’s Sunday night morning and you don’t feel like going out. Time to scramble and figure out what to cook!
I had some pico and mushrooms around, so I used them.
When using fresh mushrooms, cook them first to let the water evaporate. On medium high heat, I sauteed them for about 5 minutes.
Then I added the pico and cooked it down to also let the water out.
Then on medium heat, I added egg whites to almost cover the veg. You could use 4 whole eggs if cooking for 2.
Since I did not use a nonstick pan, this became a scramble instead of an omelet. Once it came together, I added some cheese, green onions, and parsley.
Add about one tablespoon of water to the corner and cover to melt the cheese.
Plate it up and make it look pretty because we eat with our eyes first!
