Tikka masala pizza with cauliflower crust

This was born out of necessity, no pasta sauce to find and a lunch to be made!

Started with a standard cauliflower crust frozen, added a thin layer of tikka masala sauce I had in a jar.

In a frying pan, I sauteed mushrooms with a pinch of salt and thyme.

While that was cooking, I finely chopped a small red onion. Then on medium heat, I cooked those with a dash of EVOO and a teaspoon of mango jam.

After they cooled, I topped the pizza, covered with shredded mozzarella and some black pepper.

Followed directions on the baking per package.

Looks good.

It was very good! I prefer the onion side more, next time I might try all onion. I could also top this with some mint or chutney.
