Chicken, kale, and whatever you have soup!

It’s social isolation time, and I’m using up the veggies that are looking like they need help!

I’ve soaked 1/4 cup of lentils and set them aside after rinsing. Now I gather whatever I think I should cook off so it doesn’t waste. I want to chop what will be in the first step.

In a large dutch oven, start with a little oil, sauté the onion, celery, carrot. Add lentils, pepper of choice, and chicken cube. Once you see a little brown on the onions, add water to cover plus about 1 inch.

Add garlic and thyme. Cover half way and bring to a boil, then turn down so it continues to boil but not enough to run over. Now chop rest of ingredients.

Once the lentils are soft, use a stick blender until you have a smooth broth. Then add potatoes, tomato paste, chopped kale, carrots, celery, whatever else you please. I returned the garlic and added more salt, pepper, and chili flakes after tasting.

Turn back to medium heat and boil until you like the thickness of the broth and the veg is cooked.

Add the cooked chicken, more thyme, parsley, whatever herbs you have, I like lime zest and then remove from heat. I like lime juice too.

Chicken and vegetable soup

  1. Cooked chicken, cut in bite sized pieces about 2 cups2.  Large onion, rough chop
    3.  3 celery stalks, 2 rough chop, 1 fine dice
    4.  3 carrots, 2 rough chop, 1 fine chop
    5.  3 leaves of kale, washed, stem and vein removed, finely chopped
    6. Entire garlic head, scrubbed with soap and water, then most of peels removed and top 1/3 cut off.
    7. Fresh thyme,  parsley, lime, whatever else you have
    8. Chicken stock or water plus chicken cube
    9. 1-2 tbsp tomato paste ( I like the tube)
    10.About 2 cups of diced potatoes with or without skin
    11. 1/2 cup lentils
    12. Hot pepper of choice, can be 1/2 habanero, 1 tsp chili flakes, chopped jalapeno,  whatever you have (optional)

    Give it a try! You can use so many veggies here, just make up your own!
