I used this recipe/ video by Gemma.
After allowing the dough to rise overnight, I rolled it out and cut into pieces. Allow to sit for a good 5 minutes so the gluten can relax.
Roll out with your hands and make the pieces as even as you can. You want it to be thin because it will swell when you boil it.
These were a bit thick, next I boiled them in baking soda water or about 30 seconds. then brush lightly with egg wash and top with flaky salt.
When it is a golden brown, brush with a little butter. Not too much, can get soggy.
