West Indian Egg Curry

While the eggs were boiling, I was chopping.
Peel eggs and sauté in some oil.
Meanwhile, make a curry paste
Set aside the eggs and sauté the veg, then add the curry paste.
Cook the potatoes first to about half way. Then add the eggs.
Once the potatoes are fully cooked, remove the eggs and potatoes and boil down the sauce a bit more if needed. Top with sauce and the. Green onions.

If you need to buy spices, these are good and the curry powder in the red tin, Lalah’s or Bolts.


  • 18 boiled, peeled eggs ( plan for 2 per person)
  • 3-4 potatoes cut in 4
  • 1 small onion
  • 4 green onions
  • 8-10 garlic cloves
  • 1/2 diced tomato
  • 1 tsp tomato paste
  • 2 tbsp curry powder
  • 1 tsp garam masala
  • Serve with basmati rice
